func StartServerManager(ctx context.Context, client client.Client, ofClient *openfeature.Client, exposeMetrics bool, interval time.Duration)

StartServerManager starts a server manager to expose metrics and runs until the context is cancelled (i.e. an env variable gets changes and pod is restarted)
